💪Buffed Up Protein Banana Bread
A high protein low sugar banana bread based on my mother’s family’s traditional banana bread recipe.

Instructions
- Preheat oven to 350°F (175°C) and lightly grease or line a 9×5-inch loaf pan.
- Mix dry ingredients: Combine flour, protein powder, oat fiber, almond flour, pudding mix, baking powder, salt, xanthan gum, and Splenda in a large bowl.
- Mix wet ingredients: In another bowl, whisk together mashed banana, Greek yogurt, egg, egg whites, olive oil, and vanilla until smooth.
- Combine: Add wet ingredients to dry and stir until just combined — avoid overmixing (this keeps it soft, not tough).
- Bake: Pour into loaf pan, smooth the top, and bake for 55–60 minutes or until a toothpick inserted near the center comes out mostly clean (some moist crumbs are okay).
- Cool: Let it cool 10 minutes in the pan, then transfer to a rack to cool completely before slicing.
