Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease or line a 9×5-inch loaf pan.
  2. Mix dry ingredients: Combine flour, protein powder, oat fiber, almond flour, pudding mix, baking powder, salt, xanthan gum, and Splenda in a large bowl.
  3. Mix wet ingredients: In another bowl, whisk together mashed banana, Greek yogurt, egg, egg whites, olive oil, and vanilla until smooth.
  4. Combine: Add wet ingredients to dry and stir until just combined — avoid overmixing (this keeps it soft, not tough).
  5. Bake: Pour into loaf pan, smooth the top, and bake for 55–60 minutes or until a toothpick inserted near the center comes out mostly clean (some moist crumbs are okay).
  6. Cool: Let it cool 10 minutes in the pan, then transfer to a rack to cool completely before slicing.
