Instructions

  1. Preheat oven to 350°F (175°C). and grease or line a 9×5-inch loaf pan with parchment paper.
  2. Mix the dry ingredients: In a large bowl, whisk together flour, protein powder, baking powder, salt, and Splenda.
  3. Mix the wet ingredients: In another bowl, whisk together mashed bananas, Greek yogurt, olive oil, egg, egg whites, lemon juice, lemon zest, and vanilla extract until smooth.
  4. Combine wet and dry: Add the wet ingredients to the dry mixture. Stir gently until just combined — do not overmix (this keeps the loaf tender)
  5. Add blueberries: Toss blueberries lightly in 1–2 tsp flour or protein powder to prevent sinking, then fold them gently into the batter. Add chia seeds if desired.
  6. Bake: Pour batter into the prepared loaf pan and bake for 50–55 minutes, or until a toothpick inserted into the center comes out mostly clean.
  7. Cool: Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack. Allow it to cool completely before slicing.
